Is there a way to create a custom list. I collect Lands, all lands and it would be great to be able to track how my progress is going through the checklists or blocks (i think list/checklist is the better option for this).
Unless there is a way todo this that im missing.

Lists are the way to go. Flag all the cards you want with a tag and create a list for that tag
